Roasted Vegetables -- delicious second acts

 

In winter it may seem our vegetable options are limited, but for me it’s the best time for roasting the hearty vegetables of the season.  When the temperatures drop, I crank up the oven and toss in a cornucopia of the season’s best.  They are the perfect side dish to any meal and can be used in endless soup variations.  Here are a couple of my favorites.
